This is a quality fairly traded, co-op-grown, current crop coffee. Like most of the Sumatras that we've carried in the past, this coffee is on the cleaner side of the typical regional profile, but it does have some classic Sumatra characteristics in the background as well. The dry fragrance is chocolatey and fresh, with a bit of fermenty (not in a bad way), rich fruit. Overall flavors in the cup tend toward chocolate, mild earth and red fruits--raspberry, maybe. It also has what I characterize as a little bit of a "husky" character--not a baggy note that indicates past crop age, but a dry, cedar-like aroma that I find pleasant. In the past, I've called this flavor/aroma profile "raspberry bramble." It is a very sweet coffee, with plenty of body. And it doesn't change all that much as the cup cools. We roast this coffee a little past second crack (a medium/medium dark roast) in order to accent its sweetness without obliterating the fruit and origin characteristics.
